1 (8 ounce) package cream cheese, softened
3/4 cup white sugar
1/2 teaspoon salt
3 eggs
1 cup sour cream
1 teaspoon vanilla extract
1/2 cup buttermilk
3/4 cup flaked coconut
3/4 cup chopped pecans
1/2 teaspoon vanilla extract
1/2 cup flaked coconut
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan over medium-low heat, combine cream cheese, sugar and salt. Remove from heat. In a large bowl, beat egg yolk mixture, cream cheese mixture and vanilla in medium bowl until smooth.
Gradually whisk egg whites into cream cheese mixture, then gradually fold in pecans and coconut. Pour filling into crust. Arrange pecans evenly over top of pie.
Bake in preheated oven for 40 minutes or until set in center. Cool before serving.
