1/3 cup buttermilk
1/2 cup shortening
2 eggs
1 1/2 cups fresh banana
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, cream together buttermilk and shortening until soft peaks form. Add eggs one at a time. Stir in 1 banana at a time, then gradually pour into prepared pan.
Bake 35 to 40 minutes, until a toothpick inserted comes out clean. Cool 10 minutes before serving.
