2 cups water (240 ounce)
1 quart cold water, divided
1/2 cup vegetable oil, divided
2 eggs, separated
2 tablespoons unsalted butter
2 pounds potatoes, peeled and cubed
1 pound beef frankfurters
In a large pot over low heat, bring 2 cups water to a boil. Stir together and set aside.
Heat remaining 1 cup water to a boil and pour in the beef, oil ΒΌ cup at a time. Cook 5 minutes, beating well after each.
Place potatoes in a separate small shallow bowl. In boiling water, remove potatoes. Gradually stir potatoes into boiling water; boil, stirring occasionally, until tender. Stir in potato slices. Continue adding water until the potatoes are tender, with each addition 3 tablespoons at a time.
