Homemade Cinnamon Candy II Recipe


2 1/2 cups sifted cake flour

1 cup muslin

1/4 cup butter

1/4 cup white sugar

6 teaspoons baking powder

1 tablespoon ground cinnamon

2 teaspoons white sugar

1 teaspoon salt

4 eggs

1 teaspoon vanilla extract


Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, whisk together flour, muslin and butter until dry. Stir in granulated sugar. Beat in baking powder, cinnamon and salt and set aside.

Melt double boiler or oil of microwave in small saucepan over medium-low heat. Mix in eggs, vanilla extract and cinnamon. Gradually stir in cake mixture. Stir into flour mixture, beating well after each addition, until just moist and glossy. Drop by heaping tablespoons onto the prepared cookie sheets.

Bake 24 to 28 minutes or just until firm and very golden. Cool briefly in cooling pan on wire rack. Chill until ready to use; store until ready to use.
