1/4 cup butter
1 cup water
1 cup ricotta cheese
2 tablespoons white sugar
3 tablespoons grated Parmesan cheese
2 eggs
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch baking dish.
In a medium bowl, toss ricotta cheese and 1 cup of water with 1 cup ricotta cheese until ingredients are well mixed. Place in prepared baking dish.
Heat 1/4 cup of butter in a medium saucepan over medium heat. Sautee ricotta in butter until tender, about 5 minutes. Stir in 2 tablespoons sugar, 3 tablespoons Parmesan, and 1 egg. Bring mixture to a boil. Reduce heat, and simmer, stirring constantly, until mixture thickens; about 20 minutes. Stir in salt and 1/2 cup ricotta cheese, and cook until cheese has melted and mixture is smooth; about 5 more minutes.
Remove ricotta from heat; stir in 1/2 cup of sauce. To serve, spoon the sauce over the ricotta, and top with fresh basil leaves.
