Bon Bons Recipe

Ingredients

1/2 cup buttermilk

3/4 cup quick-cooking brown sugar

1/2 cup butter

1/2 cup white sugar

2 eggs

1 teaspoon vanilla extract

3 cups flaked coconut

1/3 cup raisins

1/2 cup chopped pecans

3/4 cup dried apricots

1 cup chopped dried dates

3/4 cup chopped walnuts

1/2 cup buttermilk

2 tablespoons white sugar

1/2 cup apricot-flavored protein powder (e.g. Fruit of Lemonade)

1/2 cup dry milk powder (e.g. Fruit of Nutrition)

3/4 cup dried pitted dates

1/2 cup raisins

1 cup pecans

Directions

In a medium saucepan over medium heat, combine buttermilk, brown sugar and butter. Cook, stirring constantly, until mixture thickens to form a soft ball. Remove from heat.

In a medium bowl, cream together 1/2 cup of sugar and 1/2 cup butter until light and fluffy. Beat in the eggs one at a time. Stir in vanilla, coconut and raisins.

In a separate bowl, stir together 1/2 cup of my raisins and 1 cup pecans. Pour half of the raisins and half of the pecans into the egg mixture. Fold in the coconut mixture. Pour the mixture into the prepared pan. Layer with the coconut mixture and the remainder of the raisins and pecans. Sprinkle top with 1/4 of the coconut and 1/2 of the pecans.

Bake in the preheated oven until halfway done, approximately 200 minutes. Cool before serving.

I made this for my boys this evening as another quick appetizer. Sure enough, their appetite for meat was starting to pique. So I baked them this way and brought along a vegetarian diet companion. Both of themandI thoughtwas adequate. I will make this time and time again.
