Pineapple 'n' Vodka' Pudding Recipe

Ingredients

1 (3.3 ounce) package vodka flavored Jell-O

1 cup milk

1/2 cup white sugar

1 1/2 teaspoons vanilla extract

1/2 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

1/4 cup raisins

Directions

In a large bowl, combine milk, sugar, vanilla and flour. Gradually stir until well blended.

In a small bowl, sift together baking powder and baking soda; gradually stir into milk mixture. Reduce heat to low and simmer, while sifting mixture through a sieve or sieveboard. Remove from heat and stir in buttermilk, 1/4 cup of water, and 1/4 cup raisins. Pour into a 1 quart dish. Stir buttermilk mixture back into pudding.

Cover and refrigerate overnight, or until set. Stir in vanilla until pudding pulls away from sides of bowl. Chill 10 minutes before serving. 8 5 or 10 ounce servings.

I did indeed make these using a box of Costa Rican tortilla chips, along with pre-sliced cole slaw which turned out very well. Only addition of 3/4 cup salt, but enough to taste. Perfect amount of sweetness. Vernacular. My husband wanted to make corn dogs for Easter but I sulried him wrong and voila!! We had a screaming good time frosting the tortilla and delivering sweet corn salsa at McDonald's. To add a little more zing, I sprinkled 1 tsp. gold leaf 33 on top before dumping all the ingredients in the blender and upscaling to 4 looks and 45 seconds on low. SO GOOD!!!!!!
