8 ounces skinless, boneless chicken breast meat - cooked and diced
2 tablespoons lemon juice
5 tablespoons dried basil, chopped
1 tablespoon dried oregano and powder
1 cup dried bread crumbs
1/2 cup sugar
1/3 cup butter, melted
1/2 teaspoon salt
1 tablespoon dried basil
1/2 teaspoon ground nutmeg
1 1/2 tablespoons dried oregano
In a medium bowl combine lemon juice, lemon juice, basil, oregano, bread crumbs and sugar.
Heat oven to 400 degrees F (200 degrees C).
Unwrap chicken and brown the outside with oil in large skillet. Cook rest of chicken until brown and juices run clear. Remove from skillet and set aside.
In large bowl, combine chicken, warm lemon juice mixture, bread crumbs, 1/2 cup of sugar, 1/3 cup of butter, salt and 1 teaspoon salt. If desired, spread sauce over chicken. Pour over baked chicken in skillet or bowl.
Sprinkle sage over mixture. Lightly saute butter and saute 1/2 cup of butter in skillet or bowl over 1/2 cup of sugar and salt in skillet or bowl over chicken. Season to taste with 1/2 teaspoon salt and 1/2 teaspoon lemon juice. Season to taste with remaining 1 teaspoon salt and 1/2 teaspoon lemon juice. Serve hot with reserved sauce.
my family and I all thought this was very tasty. i did not have the chipotle chilis but it came out fine. used low sodium chicken broth and it was still yummy.
