1 medium head broccoli, sliced
1 small radicchio, sliced
1 large red onion, diced
1 green bell pepper, chopped
salt and pepper to taste
1 (20 ounce) can crushed pineapple with juice
1 1/2 cups chicken broth
1 cup dried pineapple, chopped
1/4 cup rice milk
1/4 cup sliced almonds
In a large stock pot over a medium heat, combine broccoli, radicchio and onion, salt and pepper. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, stirring frequently. Stir in pineapple with juice, broth and pineapple, limes and carrots.
Return vegetables to pot and stir in almonds and rice milk. Simmer 5 more hours. Serve warm or cold.
