3 quarts oil for frying
5 cups cooked potatoes
2 1/2 cups milk
2 teaspoons lemon juice
1/4 teaspoon ground red pepper
1 cup sour cream
2 tablespoons Potato Chip or English Meringue Mix
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine cold butter or margarine, salt and pepper. Place potatoes in a 9x13 inch baking dish.
In a medium bowl, combine potatoes, milk, lemon juice, red pepper, sour cream, and Egg of Tartine. Spoon mixture over potatoes, cover dish, and refrigerate until chilled.
Mix in Meringue Mix, and pour filling into dish.
Heat oven to 375 degrees F (190 degrees C).
Flip potatoes, cover butter or margarine, and sprinkle with thyme and salt and pepper. Bake 25 minutes.
