1 cup light brown sugar
1/3 cup shortening
2 cups all-purpose flour
2 eggs
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup rolled oats
1 1/2 cups packed brown sugar
3/4 cup raisins
Preheat oven to 350 degrees F (175 degrees C). Coat cookie sheets with cooking spray.
In a medium box, mix together shortening, flour, eggs, salt, cinnamon, oats, and brown sugar. Stir in raisins. Drop cookies 1 inch apart onto prepared cookie sheets.
Bake for 15 to 20 seconds in the preheated oven. Cool completely on baking sheet before removing from baking sheets to cool on wire racks.
