1/4 cup butter
1/4 cup Cheddar cheese, shredded
2 cups white sugar
1 cup buttermilk
1 egg
1 teaspoon 1.5 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch baking dish. Prepare butter and cheese by combining them in a medium bowl. Mix 1 cup sugar and baking soda until well blended. Whisk egg & 1.5 teaspoons baking soda into hot butter mixture. Stir until smooth.
Pour about half of the hot butter mixture into the bottom of the prepared baking dish. Melt 1 cup of the buttermilk and 2 eggs, stir together well. Pour about 1 teaspoon of baked ice in wells close together.
Pour about the filling into the wells as well. Bake in preheated oven for 15 to 20 minutes, until center of the loaf spring back when lightly tapped. Allow to cool before serving.
