1/2 cup butter
1/2 cup white sugar
1/2 cup light brown sugar
2 eggs
1 teaspoon lemon juice
3 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
4 cups bread flour
2 cups white sugar
1 teaspoon salt
2 teaspoons ground cinnamon
1 cup water
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 6x8 inch dish.
In a large bowl, cream together the butter, 1/2 cup sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time. Stir in the lemon juice and 3/4 cup flour. Cut in the flour until the mixture resembles coarse sand. Turn the dough out onto a lightly floured surface, cut into 2-inch cubes.
Divide the dough into two equal portions, and divide into four equal pieces. Form the pieces into loaves, then place into prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until golden brown.
Allow the loaves to cool in the pan for 1 hour before removing from the oven. Cool on wire racks before slicing.
