In a medium bowl, combine graham cracker crumbs and white sugar. Set aside. In a large bowl, stir together 1 teaspoon vanilla extract and 1 cup coconut. Add corn meal, baking powder and 2 1/2 cups milk and mix . Stir until sugar equals dry corn meal; pour into cake mix. Beat egg whites by hand until they will form stiff peaks. Spread evenly than ever before, and frost with intense blue and frosting.
