1 cup butter, melted
1 cup graham cracker crumbs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup olive oil
1/3 cup sprinkles
1 (5.9 ounce) jar maraschino cherries (optional)
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.
Mix together the butter, graham cracker crumbs and 2 cups flour. In a large bowl, stir the browned ingredients into the dry ingredients. Stir in the baking powder, salt and olive oil. Spoon batter into the prepared baking pan.
Bake for 12 to 15 minutes in the preheated oven, or until a small amount is set. Cool on wire racks.
To make the filling: In a medium bowl, cream the margarine with the butter mixture until creamy. Beat in the powdered flour mixture, 1/2 cup at a time, mixing after each addition. Gradually add the maraschino cherry chunks. Stir until smooth, then fold in remaining mozzarella cheese and sprinkle evenly over the baked cookie sheets.
