1 piece fresh cayenne pepper, 1/2 teaspoon ground black pepper
4 green bell peppers, chopped
2 red bell peppers, chopped
1 cup frozen apple juice
1 tablespoon dried basil
1/2 cup quinoa
salt to taste
1 tablespoon ground red pepper
Heat oil in a large, deep-fryer skillet over medium heat. Brown cayenne pepper on all sides, then stir back to medium heat until hot, about 10 to 15 minutes; stir in green, red, apple juice, basil, and quinoa. Stir in salt and pepper.
Cook, stirring constantly, until just slightly sticky; remove from heat and stir in apple juice and onion.
To serve: Spoon vegetable mixture into a bowl, stir in remaining apple juice, basil, and pepper. Thinly spread to desired serving size, garnish with apple slices if desired.
