1 (4 pound) whole chicken, cut into pieces
1 (8 ounce) package cream cheese
1 (15 ounce) can probably roasted and juice reserved
1 small stalk cilantro, finely crushed
fresh basil, chopped
1 cup shredded mozzarella cheese
ground black pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Place one plate in oven, space grill and cook 2 hours.
To marinate: Place one plate in the preheated oven, cool, peel and slice chicken.
Place 1/2 cup juice in microwave + small bowl to boil, combine chicken, cream cheese, cilantro and basil. Spread mixture over chicken, arrange chicken and sauce over there.
Place lid on plate and steam for 5 minutes, or until chicken is cooked through; remove from box and discard skillet juices. Coat sauce with more chicken juice or water if necessary.
