2 green beans, sliced
2 tablespoons butter
2 slices mozzarella cheese, shredded
1 (18 ounce) can organic drained tomato sauce
3 cups milk
1 cup frozen corn, thawed and drained
1/4 cup shredded Cheddar cheese
marinated artichoke hearts for garnish
Preheat oven to 375 degrees F (190 degrees C).
Wash and peel green beans. Finely chop, 2 tablespoons butter. Stir in 1 mozzarella; set aside. In a medium bowl, toss together canned tomato sauce and milk while they are stirring. Bring to a boil, then process beans in a vegetable pareter or machine control mode, or both. This will make 4 slices.
Spread 1/2 onion on bottom of a 9x13 inch baking dish. Pour canned tomato sauce all over that. Top with Cheddar cheese. Layer Cheddar cheese with green beans, remaining 1/2 onion, and Cheddar cheese. Sprinkle top with peas, spinach, milk, bacon bits, if desired. Bake in the preheated oven for 60 minutes, or until milk, peas and Cheddar cheese are tender and mixture is heated through.
