1 pound pork, diced 1/2 cup milk
1 tablespoon lemon juice
4 apples, peeled, cored, and cubed
1 leek, minced
1 teaspoon ground cloves
1 teaspoon ground cinnamon
Preheat oven to 375 degrees F (190 degrees C).
In a medium skillet, combine milk, lemon juice and apples; heat for about 2 minutes. Remove from heat and drain as smooth as you can. Stir pork, bring to a boil and then reduce heat to low; simmer for 10 minutes, until pork is tender.
Ladle milk and juice into a clean, dry stockpot and simmer over medium heat for 1 hour; cubes reserved and liquid reserved.
In a 3 quart casserole dish, layer cube of reserved pork cubes and onion mixture. Cover with bell peppers; top with potatoes. Spread over vegetables. Pat out rind of each pepper and spread over potato layer.
Bake in preheated oven for 45 minutes.
Serve potato set over soup.
