2 bulbs garlic, minced
1 cup olive oil, cut in half
1 cup soy sauce
1 small white onion, cut into 1/2 inch pieces
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon dried basil
1 teaspoon dried red pepper flakes
1 teaspoon dried bay leaves
1/2 teaspoon white sugar, if desired
Line a water bath dish with plastic wrap.
Heat oil in a tall glass over medium heat. Saute garlic, onion, 2 cloves of garlic and salt and basil until tender; until onion is thoroughly heated. Cook 2 minutes, stirring occasionally. Stir in garlic powder; cook, stirring, until quickly and evenly distributed. Garnish with salt and white pepper flakes. Season with bay leaves. Serve with fresh mint leaves for dipping.
