I should probably point out first that this is a great spring sandwich option. Although I like my vegetables cold, I think this lets me experiment. Also, if I am not allowed to have fresh tomatoes, I will leave them out--scrumptious. Moreover, I used red pepper and not as many mushrooms as it called for, because I just didn't have them. (Maybe I'll have them later on when I have the tomatoes frozen and the ramps seperate.) This was sooo easy and so good! I wish we had bought more than one package of ramp chocolate chip cookies for this recipe!
