1 (25.25 ounce) can red or green bell peppers
1/2 cup all-purpose flour
2 egg whites
1/2 teaspoon vanilla extract
1 cup foil for foil
Preheat oven to 375 degrees F (190 degrees C). Sift together flour and shortening. Set aside.
In a large bowl, toss together egg yolks and 1/4 cup of flour. Blend in egg whites and vanilla. Fold in one tablespoon of flour mixture at a time, until mixture resembles coarse meal. Pour into prepared patties.
Bake at 375 degrees F (190 degrees C) for 30 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 30 minutes.
