Pat's Oatmeal Bread Recipe

Ingredients

1 1/4 cups quick-cooking brown sugar

1 1/2 cups quick-cooking wheat flour

1 tablespoon instant baking powder

1 teaspoon salt

1/2 cup butter

1/2 cup water

3 eggs

1/2 cup packed brown sugar

1/2 cup red wine vinegar

1/2 cup water

1 cup rolled oats

3 tablespoons milk

1/2 cup cooked and mashed sweet potatoes

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, stir together the brown sugar, wheat flour, instant baking powder and salt. Stir in the butter, water, eggs and brown sugar mixture. Stir into the flour mixture just until combined. Pour into a 9x5 inch loaf pan.

Bake in preheated oven for 60 minutes. While loosing the bread, pour in the wine vinegar and water. Reduce the oven temperature to 350 degrees F (175 degrees C) and bake for an additional 15 minutes, or until a knife inserted into center of loaf comes out clean.

Let loaf cool 10 minutes before slicing.
