2 cups rolled oats
1 cup golden raisins
2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 cup butter, melted
1 cup confectioners' sugar for rolling - 1 cup sifted, vegetable-based components
1/2 cup milk chocolate chips (optional)
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, use an electric mixer to mix together the oats and golden raisins. Stir in the flour, baking powder, baking soda and salt. Stir until well blended. Fold in the butter. Drop cookies by heaping tablespoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until a toothpick inserted comes out clean. Allow to cool on baking sheet for 2 to 3 minutes before removing from baking pan.
