1 cup cornstarch
1 cup water
2 1/4 cups water
4 eggs
2 potatoes, peeled and cubed
1 cup frozen chopped spinach, thawed and drained
1/2 cup lightweight cream cheese
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup chopped onions
In a large bowl, stir together cornstarch and water. Bring to a boil and then dissolve in hot water. When mixture reaches a boil, add eggs, potatoes, spinach and cream cheese. Continue to heat through and remove from heat.
Mix in salt, pepper, onion flakes and cornstarch mixture. Pour into sauce over hot chicken. Serve over cold gravy.
