Queijadas (Tortillas) Recipe

Ingredients

1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces

1/4 cup margarine, cut into 1 inch pieces

1 onion, finely chopped

1 (8 ounce) measure flour

1/4 cup shredded Cheddar cheese

1 (8 ounce) package cream cheese, diced

salt and pepper to taste

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a deep skillet.

In a large bowl, combine margarine, onion, flour, and Cheddar. Transfer to the skillet, and continue to stir until all liquid is absorbed. Add cream cheese, salt and pepper. Cook over medium-high heat until mixture thickens. Remove from heat and stir in cream cheese mixture.

Transfer the cooked mixture to the bottom of the skillet, and pour in remaining 1/2 cup of flour. Toss with Cheddar mixture, and pour the warm liquid over the entire bowl.

Transfer the mixture to a 9x13 inch baking dish, and sprinkle with cream cheese mixture. Bake in the preheated oven for 1 hour.
