No Dipping Sauce Recipe

Ingredients

1/3 cup white sugar

1/3 cup cold water

3 tablespoons butter

2 tablespoons unsalted oil

1 clove- blond woodchips, peeled and cut into 2/3 inch pieces

3 1/2 bay leaves (optional)

Directions

Place 1/3 cup sugar in a medium saucepan and measure 1 1/3 cup water in a medium bowl. Bring to a boil, then reduce heat to medium low. Pour sugar into saucepan and cook, stirring occasionally, until very stiff. Sift 1 cup water into hot sugar; set aside.

In a separate bowl, melt butter and whisk together sugar, cold water and butter. Set over medium heat. Stir in flour, stirring until well blended. Beat in flour.

Pour mixture into hot butter, mixing just until wet enough to stick together but not too dry. Prepare to simmer; cook until mixture thickens into syrup, about 6 minutes. Remove from heat and cool slightly; bowl. Whisk in whiskey. Pour over cooked meat. Garnish laden with bay leaves.
