Lemon-Shelled Almond Oat Muffins Recipe

Ingredients

1 1/2 cups whole wheat flour (bean protein)

1/2 cup butter, softened

1/4 cup white sugar

2 eggs

2 teaspoons honey

1/2 teaspoon salt

3 tablespoons honey

1/4 teaspoon peppermint extract

1/2 teaspoon salt

3/4 cup packed brown sugar

2 teaspoons almond extract

Directions

Heat oven to 350 F. Lightly grease a large muffin pan.

In a medium bowl, stir together whole wheat flour, 1/2 cup butter, 1/4 cup sugar, and eggs. In a small bowl, mix dry ingredients without honey, salt or peppermint extract, and pour into flour mixture. Stir just until all ingredients are combined. Stir in reserved flour mix, red food color and paprika; spoon batter evenly into prepared muffin cups.

Bake in preheated oven for 20 to 25 minutes, until light golden brown.

Add almond extract; bake in preheated oven for 5 minutes. Cool completely before serving.

I really like the cookie recipe but some directions are missing (according to this same recipe on the Cheerios website)! Preheat the oven to 325 degrees, and after filling the pan bake 15 minutes. Follow the recommendations of the box office, and we ate our boxes in 30 minutes! Cheers,
