2 red potatoes, peeled and sliced
1/4 cup all-purpose flour
2 tablespoons butter
1/2 cup brown sugar
1/2 cup chopped pecans
1 teaspoon salt
2 cups baking mix
2 eggs
3 tablespoons white sugar
1 1/2 cups milk
3 tablespoons lemon juice
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and cut into 1 inch cubes.
Whisk together the flour, butter, brown sugar, pecans and salt. Stir together baking mix, eggs, sugar, milk, lemon juice and half of the flour mixture in the bowl. Pour mixture into cookie sheets.
Bake in preheated oven until cookies are firm, about 15 minutes. Remove from oven but brush with lemon juice. Immediately press onto the tops of cookies with a fork. Cool completely on wire racks.
