1/2 cup semisweet chocolate chips
1/2 teaspoon carrot powder
1 cup white sugar
1 egg
1 (1 ounce) square unsweetened chocolate, chopped
In a medium-sized bowl, stir together the chocolate chips and maraschino cherries. Set aside.
In a large glass or metal bowl, beat together the sugar, egg and cocoa until soft peaks form. Gradually stir in the flour, an three-quarter cup at a time, until creamy. Stir in the chopped chocolate, just until incorporated. Immediately fold in the pieces and form into circles about 2 inches in diameter. place on wax paper and chill in the refrigerator overnight. Whipped before serving.
