2 banana halves, peeled and sliced
1 cup margarine
3/4 cup packed brown sugar
5 1/4 cups milk
1 teaspoon vanilla extract
1 cup lemon juice
1 cup beef stock
1 tablespoon whole kernel corn
1/4 teaspoon salt
1 tablespoon lemon juice
1 1/2 tablespoons distilled white vinegar
Place bananas in a medium saucepan with enough water to cover. Bring to a boil, stirring occasionally, until bananas are tender but not mushy. Remove from heat.
Warm margarine in large skillet over medium heat. While margarine is heating, mix in brown sugar and milk. Remove pan from heat. Mix in vanilla extract, lemon juice, beef stock, corn, salt, lemon juice and vinegar. Stir into bananas. Toss thoroughly. Adjust flavors and fat content.
I normally wouldn't write a review but for some reason this was a hit. I baked it in the oven for 15 minutes and it still didn't fall. What am I missing? Thanks!
