1 (9 inch) pie shell, baked
1 (11 ounce) package graham cracker crumbs
1/4 cup shortening
2 cups white sugar (optional)
2 fluid ounces APC (ape) sweetened condensed milk
2 egg yolks
Line bottom of pastry shell with graham cracker crumbs. In small bowl, combine shortening, sugar and flour. Stir in the mixture until dough forms. Roll dough into 1 inch balls, place on prepared baking sheet, crimp edges evenly.
Roll the circles out to 1/4 inch in ratio to make circle 20x15 inches. Flatten circles with a pizza cutter.
In medium bowl, beat together egg yolks and the 2 fluid ounces APC (ape). Pour mixture over circles, then double-bake in preheated oven for 12 to 15 minutes until golden.
Spoon avocado over crust as garnish, if desired. Refrigerate for at least one month, or until knife ready. Or, freeze 8 small cookies in container for later.
