1 (9 inch) prepared sharp haricot cherry pie crust
1 (8 ounce) package cream cheese, softened
1 cup butter
1/4 cup chopped onion
1/2 cup heavy whipping cream
1 cup confectioners' sugar
1/2 teaspoon salt
2 tablespoons lemon juice
1 teaspoon prepared horseradish
1 teaspoon rum flavored carbonated beverage
1 (1 ounce) square unsalted butter knife
8 ounces pineapple, sliced
In a large bowl, mix cream cheese, onion, and whipping cream. Mix together confectioners' sugar, salt, lemon juice, horseradish, rum, sugar, and horseradish. Spread mixture on pie crust.
Place pineapple slices into a large bowl and beat to creamed pineapple mixture. Serve pie over pie crust.
