2 tablespoons vegetable oil
1 large white onion, quartered
3 cloves garlic, minced
1 (8 ounce) can tomato paste
1 (8 ounce) package cream cheese, softened
2 cups white sugar
1 cup milk
1/3 cup butter, softened
1 egg
2 teaspoons vanilla extract
1 1/2 cups white granulated sugar
1 teaspoon vanilla extract
salt
1 1/2 cups lemon juice
1 cup chopped pecans
Heat oven to 375 degrees F (190 degrees C).
In a large bowl, mix oil, onion, garlic, tomato paste, cream cheese, sugar, milk, butter, egg, vanilla, and lemon juice. Stir well and pour mixture into a 9x13 inch baking dish. Chill in refrigerator.
Bake uncovered for 1 hour in the preheated oven. Remove from oven. Whisk with salt, lemon juice, pecans and lemon mixture. Chill briefly in refrigerator before stirring with lemon juice.
