1 2/3 cups rolled oats
2 tablespoons white sugar
1 tablespoon butter
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
3 cups all-purpose flour
1 cup cocoa
1 cup boiling water
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the oats, sugar and butter until smooth. Beat in the eggs one at a time, then stir in the vanilla extract and baking soda. Combine the flour, cocoa, boiling water, and oats mixture; stir into the creamed mixture in a steady stream. Drop by tablespoonfuls onto the cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
