Lemys Recipe

Ingredients

2 tablespoons vegetable oil

6 medium ripe tomatoes, peeled and sliced

1/2 medium onion, seeded and cut into 1/2 inch slices

2 tablespoons sweet pickle relish

1 1/2 tablespoons yellow mustard

1/4 teaspoon salt

1 1/2 tablespoons white sugar

1/4 teaspoon sliced fresh thyme

1/4 teaspoon ground black pepper

1 tablespoon lemon juice

1 tablespoon distilled white vinegar

1 lemon slice

Directions

In a medium bowl, mash tomatoes and onion with vegetable oil and salvia. Let stand 1 hour.

Heat oil in a large skillet over medium heat.

Add tomato mixture and relish. Cook over medium heat, stirring frequently, until tomato mixture is heated through and mixture is mostly coated with oil. Stir lemon juice, mustard and salt into tomato mixture. Gradually add sugar, stirring well. Remove from heat and stir in thyme, oregano and rosemary until well blended. Allow to cool slightly. Gradually stir vinegar into tomato mixture. Season with lemon slice and serve.
