Caramel Corn Muffins Recipe

Ingredients

6 tablespoons butter

6 egg whites

1 cup white sugar

1/2 cup Vodka

3 tablespoons all-purpose flour

1 teaspoon baking powder

1 cup large egg whites

1 cup semisweet chocolate chips

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Combine the butter and eggs; whisk into a 2-quart saucepan. Bring to a boil, stirring constantly, until thickened. Boil 2 1/2 minutes until completely thickened. Add sugar, 3 tablespoons than flour; stir into boiling mixture. Remove from heat and drain over paper towels.

Beat flour into egg whites; pour mixture into prepared pan. Sprinkle with chocolate chips.

Bake in preheated oven for 35 minutes. Cool slightly on baking sheet. Serve hot or cold.
