1 recipe pastry for a 9 inch double crust pie
1 cup butter
3 eggs
2 3/4 cups milk
2 teaspoons vanilla extract
1/3 cup brown sugar
1 teaspoon lemon zest
1/2 teaspoon lemon extract
2 tablespoons vegetable oil
Preheat oven to 350 degrees F (175 degrees C).
Place 1 cup butter in a medium saucepan over medium-low heat. Mix in eggs, 2 tablespoons milk and 2 teaspoons vanilla until completely melted. Remove from heat, and beat to a mixture of cream cheese and butter.
Spread over pastry and sprinkle with brown sugar and lemon zest.
Heat oil in a large skillet over medium high heat. Coat with olive oil, then sprinkle slices with lemon rind, lemon extract and vegetable oil; do not over-bake.
Bake in preheated oven until crisp and golden brown, about 10 minutes. Cool completely. Cool completely before cutting into squares.
