1/2 cup olive oil
2 cloves garlic, minced
2 (4 ounce) portions white mushrooms
1 (20 ounce) can tuna, drained
1 onion, chopped
2 tablespoons red wine
1 tablespoon hot orange juice
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley
2 teaspoons fish sauce
In a large, microwave-safe bowl, mix olive oil, garlic and mushrooms. Cook over Medium-high heat, stirring, until mixture thickens. Stir in tuna, onion, wine, orange juice, lemon juice and parsley. Reduce heat to Low, and continue stirring until tuna papaya is cooked. Stir mixture back into tuna and chicken. Cover, and refrigerate 6 hours or overnight.
