1/2 cup butter, softened
2/3 cup packed brown sugar
1 1/2 cups packed light brown sugar
3 egg whites
1 teaspoon vanilla extract
1 1/2 cups rolled oats
1/4 cup white sugar for decoration
Preheat the oven to 400 degrees F (200 degrees C). Combine the butter and brown sugar. Add the oats and brown sugar, mix well. Slowly blend the brown sugar mixture into the egg whites with the vanilla. Spread onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until a cookie is very lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing the cookie sheet. Cool completely on wire rack.
