Coconut Cream Pie Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1/4 cup white sugar

2 eggs

1/4 cup margarine, softened

1 teaspoon vanilla extract

1 1/2 cups milk

1 1/2 cups shredded coconut

1 tablespoon all-purpose flour

1 teaspoon baking powder

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup chopped pecans

1 teaspoon lemon zest

2 tablespoons orange juice

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray pie crust with nonstick spray.

In a large bowl, beat cream cheese, sugar, eggs, margarine, vanilla, milk, coconut, flour, baking powder, nutmeg, cinnamon, ginger, salt, pecans, lemon zest and orange juice until smooth. Fill and chill pie.

Bake in the preheated oven for 10 to 12 minutes, or until toothpick inserted in center comes out clean. Cool on rack inside of pie. Chill overnight. Serve warm or warm sour cream, whipped cream, or whipped cream with fruit.
