16 eggs (one cup for each egg), one cup butter, one cup all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon white sugar
2 cups coarse sugar
1 teaspoon vanilla extract
2 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups flaked coconut (optional)
Preheat oven to 200 degrees F (71 degrees C). Grease cookie sheets or line with parchment paper.
In a large bowl, beat eggs together with 1/2 cup butter, flour, baking soda, baking powder and sugar. Stir in 2 cups flour, 1 teaspoon baking soda and 1 teaspoon sugar. Mix together with 3 cups sugar, 1 teaspoon vanilla extract and 1/2 cup flour, and mix into cellulose mixture. Drop triangles of dough onto to parchment paper.
Bake 8 to 10 minutes in preheated oven, until toothpick inserted in center comes out clean. Cool slightly on the cookie sheet before removing from cookie sheets to wire racks to cool completely.
