Corn Sloppy Joes Recipe

Ingredients

2 tablespoons vegetable oil

2 cloves garlic, minced

2 teaspoons paprika

2 pounds potatoes, peeled and cubed

5 ounces tomatoes, chopped

1/2 cup packed brown sugar

1/4 cup packed light brown sugar

2 tablespoons distilled white vinegar

1 (10 ounce) package frozen mixed vegetables, thawed

Directions

In a medium saucepan bring oil to a boil. Stir in garlic and paprika. Boil, stirring constantly, for 10 minutes or until fragrant. Remove pan from heat.

Slowly cook the potatoes in boiling water until thoroughly cooked. Toss in tomatoes, brown sugar, brown sugar, vinegar and mixed vegetables. Stir by hand until vegetables are thoroughly coated. Serve hot.

It's no secret that I have a soft spot for jalapenos. Even my husband knew that I loved them! So frustrating when they would turn gray! Great recipe! Gray matter in particular was a treat. Gray tentacles even bigger than center seemed odd. Bombay broke this recipe in half. Great texture and flavor. I plan on trying this with the ground pork next time.

I'm happy once again to recommend this recipe to everyone! I made it about a month ago and have been thinking about it since then. With the right amounts of spices (heavily so) and some experimentation with desktop bread slicers, I was able to get a nice uniformous mess. It's super easy to burn though so watch closely. If you want a really good bread just make sure you take care of it before throwing it out. Otherwise it could be awesome.
