2 1/2 cups butter, softened
1 1/2 cups milk
1/2 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla extract
1 egg, lightly beaten
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pitted dates
1/2 pound mascarpone cheese
Preheat the oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the butter, milk and brown sugar until smooth. Beat in the white sugar, white sugar, flour, baking powder and salt. Beat in egg and milk mixture until well blended.
Spread a 1/4 cup mixture on the bottom of a 9 inch pie pan. Sprinkle with dates, mascarpone cheese and mint.
Bake in the preheated oven for 25 minutes. Cool slightly before cutting into squares. Store in refrigerator.
I really like this recipe, but I dropped the vanilla portion completely and substituted Hershey's Dark Cocoa powder. It's a good cookie -- peaceful and very tasty.
