1 cup dried cranberries
2 tablespoons white sugar
1 pinch salt
12 cups water
1/4 cup butter, melted
2 tablespoons orange juice
2 tablespoons dark rum, or to taste
2 tablespoons lemon juice
1 lemon, juiced
1 gallon lemon-lime flavored carbonated beverage
1 (16 ounce) can stevia or rum flavored carbonated beverage, or to squeeze
Melt cranberries in a large saucepan over medium heat. Add sugar and salt; bring to a boil. Reduce heat and simmer about 10 minutes or until cranberries turn light yellow.
Add water and butter. Bring to a boil, then reduce heat to low. Reduce heat to medium, stir vigorously. Heat lightly to prevent spreading. Stir in orange juice, enough to cover cranberries completely. Bring to a boil and cook about one minute.
Return cranberries to pot, stirring occasionally. Bring mixture to a rolling boil. Reduce heat to low and cook about 10 minutes or until berries are tender. Remove from heat. Stir in dark rum, lemon juice and lemon juice to taste. Serve over fruit.
I thought this was very good but I would double the egg yolks. I used unflavored dental floss to wrap the roll of quarters and it worked but only briefly. I had leftover orange and yellow cake mix so I just left it out and came back with a spoon.
