3 1/2 cups all-purpose flour
1/2 cup white sugar
3 tablespoons vegetable oil
2 eggs
1 teaspoon vanilla extract
1 cup chopped pecans
1 teaspoon lemon zest
1 cup fresh lemon juice
1 cup chopped pecans
1/4 cup Kentucky bourbon
1 1/2 tablespoons brown sugar
1 cup butter
1 teaspoon vanilla extract
1/4 teaspoon salt
1/3 cup brown sugar for decoration
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix flour, sugar, vegetable oil, eggs, vanilla extract, pecans, lemon zest and fresh lemon juice and mix well. Place in a small mixing bowl. Mix bourbon and brown sugar. Stirred into the flour mixture.
Spread greased butter, lemon zest and pecans on the bottom and sides of a 4 inch springform pan. Pour pecans into pan. Place pan on the rack of a large baking sheet.
Bake in preheated oven for 1 hour, turning over every 15 minutes. Remove from oven and cool completely.
Beat 1/4 cup butter, lemon zest and pecans in a large bowl with the whisk attachment until light and fluffy. Beat in bourbon and brown sugar until well blended. Spread over pears when cool. Garnish with pecans and chopped pecans. Cover and refrigerate for several hours.
Dissolve lemon zest in whiskey and brown sugar in small saucepan until completely dissolved. Stir lemon zest mixture into the peach filling and peach filling. Spoon over the pecans.
