1 egg
1 teaspoon lemon zest, divided
1 tablespoon butter, softened
1 cup brown sugar
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons margarine, melted
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
Beat egg, lemon zest, butter, brown sugar, flour, milk, baking powder, salt, margarine, cinnamon, vanilla extract, Cheddar cheese and 1 cup sliced almonds. Transfer to prepared pan.
Bake in preheated oven for 30 minutes or until lightly browned. Drain on paper towels.
