Cherry Whipper Party Cake Recipe

Ingredients

1 cup butter, softened

1 cup white sugar

1 egg

1 teaspoon vanilla extract

2 cups whole fresh cherries

1 (.25 ounce) Package Yellow Cake Mix

2 (8 ounce) packages cream cheese

1 (8 ounce) package cream of chicken soup

2 egg whites

5 eggs

1 teaspoon vanilla extract

1 (2 ounce) package chocolates

Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) loaf pans. Set aside.

Beat butter, sugar and egg in large bowl until smooth. Beat in vanilla extract. Stir in chocolate chips and cherries. Mix together the cake mix, cream cheese and chicken soup. Fold into cherries mixture, then spread evenly into prepared pans.

Bake at 350 degrees F (175 degrees C) for 1 hour. Cool completely and chill in refrigerator.

While the cake remains in the refrigerator, whip egg whites until stiff. Reduce to 1 egg and whip into creme or sherbet.

While egg whites whip, combine chocolates and fruit in large bowl. Beat egg whites until stiff, adding 2 tablespoons at a time. Serve immediately as cool.

Very good and pretty much what I expected. I used leftover Thanksgiving turkey and sides. Pulled out meatloaf containers and lined them on the bottom of the cake. It was still pretty thin so maybe next time I'll add another package of hot dogs or ham. I did make enough for four people and left extra in the fridge.
