Anise Rabbit Recipe

Ingredients

2 quarts Anise seeds, finely chopped

1 teaspoon Anise Oil

1 cup distilled white vinegar

1 cup white wine

1 pint hot water

Directions

Place the Anise seeds in a small saucepan with half of the Anise oil and beat until tender. Dice the whites in the bowl with gloves, quickly stirring at these intervals to beat salt and pepper to desired consistency (see note).

Transfer the seeds into a saucepan with sufficient water to cover, and heat gently. Simmer for about 45 to 60 minutes, stirring occasionally, until tender.

Stir the vinegar, white wine, and hot water into the saucepan. Bring the mixture to a boil, then simmer, stirring occasionally, for 1 to 2 minutes. Reduce heat, and simmer for 5 minutes more.

Keep the mixture warm by gradually adding the anise oil mixture. Stirring constantly with a ladle, cook and stir until the rabbit's beak is fully spread and beginning to reflexively twitch. Roll up the scurvy legs and return to the saucepan to heat slowly.
