1/2 cup butter, softened
1 cup white sugar
1 egg
1 1/2 teaspoons vanilla extract
1/8 teaspoon salt
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1/8 teaspoon apple pie spice
1 cup chopped pecans
1 cup chopped pecans
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together butter and sugar until smooth. Beat in egg and 1 1 1 1/2 teaspoons vanilla extract. Combine flour, brown sugar, baking soda, baking powder and apple pie spice; mix into the creamed mixture alternately with the pecans. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
